Italian Beef Deep Dish Pizza: A Chicago Classic

This recipe recreates the iconic Chicago-style Italian Beef Deep Dish Pizza, with its towering layers of crust, rich tomato sauce, and tender Italian beef.

Yields: 6-8 servings Prep time: 1 hour Cook time: 45-60 minutes

Ingredients:

For the Crust:

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1 packet (2 1/4 teaspoons) active dry yeast

  • 1 cup warm water (105-115°F)

  • 2 tablespoons olive oil

For the Sauce:

  • 1 (28-ounce) can crushed tomatoes

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon red pepper flakes (optional)

  • Salt and pepper to taste

For the Filling:

  • 2 pounds thinly sliced Italian beef

  • 1 cup beef broth

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • Giardiniera, for topping (optional)

Equipment:

  • Mixing spoon

  • 9-inch deep-dish pizza pan

  • Rolling pin

  • Large skillet or pot

Instructions:

Make the Crust:

  • In a large bowl, whisk together flour, salt, sugar, and yeast.

  • Add warm water and olive oil. Stir until a dough forms.

  • Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.  

Make the Sauce:

  • Heat olive oil in a large skillet over medium heat.

  • Add onion and garlic and cook until softened, about 5 minutes.

  • Stir in crushed tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper.  

  • Bring to a simmer, then reduce heat and cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld.

Assemble the Pizza:

  • Preheat oven to 425°F (220°C).

  • Grease a 9-inch deep-dish pizza pan.

  • Punch down the risen dough and roll it out on a lightly floured surface to a 12-inch circle.

  • Carefully transfer the dough to the prepared pan, pressing it into the bottom and sides.

  • Spread the sauce evenly over the dough, leaving a 1-inch border.

  • Top with the Italian beef, beef broth, mozzarella cheese, and Parmesan cheese.

Bake the Pizza:

  • Bake for 25-30 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

  • Let the pizza cool for a few minutes before topping with giardiniera, if desired, and slicing.  

Tips & Variations:

  • For extra flavor, use high-quality Italian beef and a good quality giardiniera.

  • If you don't have a deep-dish pan, you can use a regular baking sheet, but the pizza will not be as thick.

  • Experiment with adding other toppings, such as mushrooms, onions, or peppers.
